Though, I have to admit, I've not arrived at this debate for the first time. It does come up every now and then, which I suspect is why DSB mentioned it in the first place.

If I remember correctly, it's not a group of 'merry gentlemen' that is being addressed, nor does the word 'rest' in this 19th(?) century context mean would we would naturally take it to mean today.

I might leave it there and let Barnet referee.

Generally speaking in published versions the comma comes after merry

God rest ye merry, gentlemen, let nothing you dismay,
Remember Christ our Savior was born on Christmas Day;
To save us all from Satan’s power when we were gone astray.

Merry is not an adjective describing the gentlemen, but an adverb for rest. It seems to come from as early as the C15th.
