Having studied it (among other things) at university, I can say that there's definitely something in it.

It's not. It's changes in body language that can be illustrative. You need to know the person's natural manner before you can pretend to make any 'reading'. All that 'if you look up and one way it means you're remembering, and if the other way you're lying' is nonsense designed to sell bollocks NLP classes to idiots.
If somebody naturally covers their mouth when they are talking, say a 19th-century genius who doesn't want people to see his f*cked up teeth coz of all the drugs he did, then covering his mouth isn't a sign he's gay (though he is) or lying.
Some people cross their arms a lot because they are comfortable that way. The only way you can 'read' arm-crossing as 'defensive' is if you know the person you are talking to doesn't cross their arms anyway.
