My advice would be to write some gags/ideas down and practise it, much like you would a speech. At least then you won't flounder and can move on to the next gag.

just recorded myself doing a 'five minute' set, as seems common at most open mics. Took me ten minutes.

Think some editing/more fluency is needed. Ever so slightly.
