People on here seem to like the one-pot slow cooked stuff.

I've made this 3 or 4 times now and it just gets better.

Take one/two chicken thigh per person. Bone in, skin on.

In a sturdy pan fry the chicken at hot, skin side down, then reduce the heat to medium. Do this for longer than you may naturally think ... getting the skin to let out its fat and begin to crisp.

Remove pieces from the pan and add smoked bacon/lardons and sliced smoked sausage. Fry until cooked, but not frazzled. Add seasoning plus a good amount of smoked paprika. Add chicken stock and white wine.

Return the chicken (skin-side up) and add canellini &/or other white beans. Gently stir until simmering. Bring to a very low heat and place a lid over the pan.

Place in an oven at a low heat for an hour. Check occasionally to ensure not drying out.

10m before serving add a good glug of balsamic vinegar. Sounds odd, but trust me.

Remove the skin and if possible the bone/knuckle. Serve with good bread and a white wine robust enough to cope.

Return for more. Wish you'd made twice as much.

I only drink red wine (if there is a choice) - white wine is for girls! FACT! 8)

the answer to "what kind of wine goes with this" is always "red wine". there - see - saved you a lot of future angst and poncing about! :D

Well, for what it's worth, I drank a red with it last night. Just that white would fit ... if robust enough.

... & no I'm not telling you which. You'd just go off on one.

Being chicken based I consider it to be, to all intends & purposes, a vegetarian dish. So you should like it.

just made a batch of roasted butternut squash soup... (I bought a butternut squash cos they were selling them off in Lidl!)

1 butternut squash (roasted)
1 onion (softened in butter)
some grated fresh ginger
seasoning
a bit of garlic
stock


bang! it's comfortsouptastic!

(next time I might add a bit of chilli)
