I think that's just there so you can lob that green shit under it, save it from affecting the meat...

Whoever prepared that clearly forgot to add a dribble of mayonnaise under the sausage.

Not advocating mass-murder as an entirely positive experience, of course, but it had its moments.

Re: What are you eating and drinking tonight?
People on here seem to like the one-pot slow cooked stuff.
I've made this 3 or 4 times now and it just gets better.
========================
Take one/two chicken thigh per person. Bone in, skin on.
In a sturdy pan fry the chicken at hot, skin side down, then reduce the heat to medium. Do this for longer than you may naturally think ... getting the skin to let out its fat and begin to crisp.
Remove pieces from the pan and add smoked bacon/lardons and sliced smoked sausage. Fry until cooked, but not frazzled. Add seasoning plus a good amount of smoked paprika. Add chicken stock and white wine.
Return the chicken (skin-side up) and add canellini &/or other white beans. Gently stir until simmering. Bring to a very low heat and place a lid over the pan.
Place in an oven at a low heat for an hour. Check occasionally to ensure not drying out.
10m before serving add a good glug of balsamic vinegar. Sounds odd, but trust me.
Remove the skin and if possible the bone/knuckle. Serve with good bread and a white wine robust enough to cope.
Return for more. Wish you'd made twice as much.

It's a strong meal. Very heavy of flavours. I'd hate you to waste a light fragrant little number on it.
I'm saving you waste ffs. Be happy.

After the first bottle, it ceases being waste and becomes medicinal in any event.

I only drink red wine (if there is a choice) - white wine is for girls! FACT!
the answer to "what kind of wine goes with this" is always "red wine". there - see - saved you a lot of future angst and poncing about!

Well, for what it's worth, I drank a red with it last night. Just that white would fit ... if robust enough.
... & no I'm not telling you which. You'd just go off on one.
Being chicken based I consider it to be, to all intends & purposes, a vegetarian dish. So you should like it.
