i've recently discovered how great fish is for when you come home a bit later than usual. boil up some veg and pan fry and a bloody great tea inside 5 mins

we've been cooking up from Ramsey's Sunday Lunch book recently. some great dishes in it, most of them simple and using local produce but good clean fun

Hard to beat a salmon filet with a knob of butter wrapped in foil then baked or 20 minutes.

hake, bake skin side up for 3 mins, turn over, chuck on some lemon zest and chilli flakes - amazing. other than that i'm a good old seabass and brocolli boy

some of these suggestions are making me hungry, sounds a bit strange but for startes I do a prawn cocktail in a potato skin instead of a glass, its Ace! for the main, id do a smoked haddock, hake and spinach medley topped with potatoes and slow melting cheese bung it in the oven and leave it for 20 minutes stir it all up and slop it on a plate! you can never go wrong
