I see there is a new bird flu threat. Having in a past life been involved with global pandemic emergency planning, I can only imagine the level of fear they are currently experiencing in that area. Sounds like this virus, whilst not yet acquiring human to human transmission, is a genuine bona fide killer. Hopefully a vaccine can be developed early enough before it inevitably does pass from human to human.

Actually, I've never seen one of them, and it's a bloody good idea coz you always know which egg to use next. I'm forever having to rearrange the eggs in the fridge so the freshest are towards the back, ever since I poached a really really rotten one.

Don't keep your eggs in the fridge!

we've always kept our eggs in the fridge. Don't they go off rapidly or hatch or something if kept at room temperature?

they are used chiefly by people that have access to freshly laid eggs - so I have one - they have the obvious advantage that you load the freshest at the top and so you don't need to pencil dates onto the eggs to know what "order" they are in...
if you buy your eggs in boxes when they are already a couple of years old - then you'd have no need of one...
Bruce, I believe, has a brother who keeps chickens and keeps him supplied...
(as LK says - don't put them in the fridge - even if your fridge comes with a fridge door egg container...)

I missed LK's advisory first time and just did an internet search. British sources recommend storage the LK way, usually for similar reasons. North American and Australian sources suggest storage in the fridge in their original container. My eggs come in a double wrapped plastic container that requires a phd to open, but I doubt much can get in from outside. Others brands just come in cardboard which would let air in. I'm slightly alarmed that on a site populated by hundreds of blokes, a discussion of whether Mila Kunis is hotter than Helen Flannagan is trumped by ruminations on how eggs should be stored!!
