Catalan of Cod (for 4)
Chop and lightly fry a whole onion in olive oil in a large pan (you'll need one with a lid)
Cut approximately 100g of Chorizo sausage into small cubes and add to the onions.
Once the Chorizo has started to soften add your 4 cod steaks. Cook each side for 1 minute.
Place a slice of Beef Tomato on each steak.
Cover the whole lot with 1kg of fresh mussels
Pour 50cl of white wine over the ingredients
Place the lid on the pan, bring to the boil, and then simmer for 10 minutes. The mussels should be open, discard any that aren't.
You could then serve into bowls or, what I do is serve the mussels as a first course (with some nice Foccaccia to soak up the soup) and the Cod steaks separately with Saffron rice.

Buy fresh from the supermarket or Fishmongers. Never frozen.

Nah sauce is easier than you think. Make up some stock, not too much, it's only boiling water and some liquid stock, or some granules or whatever, then add some chilli to it, some grated ginger, some lime juice. Add it to the veg and meat in the wok that have been stir fried, make sure it's on a full heat, bring it to the boil quickly, then add some cornflour that has been stirred into a small volume of cold water to make a paste and stir. If you need more cornflour, make a little more cornflour and water paste and add it. Only thing to do is do it quickly, so as not to stew the veg etc. Sauce should only be in the wok a minute before serving. Cheers for the recipe book recomendation William. Healthy diet not going well so far... Have just about eaten all the chocolate in the house now though...

Paid a visit to the new Tesco in Farnworth and was delighted to see brown soda-bread on sale. Love the stuff, always have since early days in Ireland, but this was absolute crud. Even with a healthy spread of Lurpak it still tasted like dry buttered cardboard. Definitely one to avoid.

Soda bread is really hard to get right without either leaving it too dry, as Bruce experienced, or stodgy as f*ck when you undercook it.

Huh. I had to put up with Icelands frozen ones defrosted. Not the same, but kids asleep so can't go up to the village bakery (best and cheapest bakery in the world)
