yeah, bloody pain, isn't it?Armchair Wanderer wrote:Is the butternut squash soup homemade? I've started getting into making it, about four times now but it takes ages to peel the squash. How do you peel it?William the White wrote:Spicy butternut squash soup... salmon fillet with assorted green veg... Very, very nice Hardy's Crest Chardonnay/Sauvignon - on offer at morrrison's, bruce...
we just use a potato peeler.
hard work - but homemade soup the best... We nearly always have one on the go...
One of my fave christmas presents ever was from my late mother in law - 'The Soup Bible' - just excellent...

I'd say bacon is optional.Prufrock wrote:I get slagged off, and Bruce doesn't even have bacon in his spag bol. Pfft.
I find it can make the whole thing too salty, especially when you top it (as you should) with lashings of freshly grated parmesan cheese.
Technically a bolognaise should be a mix of beef and pork mince which is where the bacon/pancetta comes from.
Essential ingredients that cannot possibly be missed out of the sauce though are...
Mince
Carrot
Celery
Onion
Tomato
Garlic
Red Wine
Good quality stock
Olive Oil

Milk? Have you gone mad? Milk?
Definitely on board with the bacon/pancetta option - finely chopped chicken livers are also a good addition.

You should support me in this. Milk is used to tenderise the meat early in the cooking process. It's also not traditionally served with spaghetti, but with a flatter pasta (like Tagliatelle) or a penne to absorb the sauce into which it's mixed.

I've fallen out with pasta now after that goofy Japanese bint, who annoys me enormously, was singing its praises on Masterchef. The condition will pass, I'm sureGary the Enfield wrote:Bruce Rioja wrote:Milk? Have you gone mad? Milk?

Anchove, is also a possibility, just dissolves into the sauce!

Was discussing anchovies with my colleagues only yesterday - my ultimate cheating pizza is Warby's toastie, tomato puree, Gouda and anchovies all grilled up. Utterly lush!BWFC_Insane wrote:Sounds ace.Bruce Rioja wrote:Milk? Have you gone mad? Milk?

I know it.. Rosso, by the way is shite. Steer clear. Shit service, shit food. But because they hire people to stand outside and take photo's of people walking in (I shit you not!), people seem to think it's 'cool'Bruce Rioja wrote:Apparently it's facing Rio Ferdinand's place, if you know where that is (I don't)boltonboris wrote:Is it the one on the top corner where HSBC used to be? Re: What are you eating and drinking tonight?
Cheers guys - will avoid. San Carlo is where me and matey boy were meant to be going when we played Man U a couple of seasons back, but got bladdered instead. It's perhaps a little ignorant of me but I can't tear myself away from El Rincon, Dimitri's and East z East, comfortable in the knowledge that the nosebag in any of the three will always be utterly top notch.BWFC_Insane wrote:100% correct.boltonboris wrote:I know it.. Not sure if it was the same for you.. But to me the food tasted like it was mostly just reheatable guff. Not cooked on site. The kind of stuff, you'd get at a chain like Bella Italia or even in a chain pub??BWFC_Insane wrote:100% correct.boltonboris wrote:I know it.. Rosso, by the way is shite. Steer clear. Worst meal I've ever had was at a place called Peruvia, in Manny. Just over the amphitheatre from Bar 38. Hopefully they'll have gone bust now - they deserve to have. Absolutely shocking!

It certainly wasn't what I'd associate, with fresh, flavoursome Italian cooking.
And Bruce all those places are great, but you're really missing out if you don't give San Carlo a go too...don't expect peace and quiet though, its always manic in there!
