I'd say bacon is optional.

I find it can make the whole thing too salty, especially when you top it (as you should) with lashings of freshly grated parmesan cheese.

Technically a bolognaise should be a mix of beef and pork mince which is where the bacon/pancetta comes from.

Essential ingredients that cannot possibly be missed out of the sauce though are...

Celery
Onion
Tomato
Garlic
Red Wine
Good quality stock
Olive Oil

I find it can make the whole thing too salty, especially when you top it (as you should) with lashings of freshly grated parmesan cheese.

Cheers guys - will avoid. San Carlo is where me and matey boy were meant to be going when we played Man U a couple of seasons back, but got bladdered instead. It's perhaps a little ignorant of me but I can't tear myself away from El Rincon, Dimitri's and East z East, comfortable in the knowledge that the nosebag in any of the three will always be utterly top notch.

Worst meal I've ever had was at a place called Peruvia, in Manny. Just over the amphitheatre from Bar 38. Hopefully they'll have gone bust now - they deserve to have. Absolutely shocking!

Oh absolutely, but not at chain prices either....

It certainly wasn't what I'd associate, with fresh, flavoursome Italian cooking.

And Bruce all those places are great, but you're really missing out if you don't give San Carlo a go too...don't expect peace and quiet though, its always manic in there!
