The pie came out delicious.

Not the best presentation and I had to use the dogs' spare water bowl but I enjoyed it.

Brush it with a whisked egg or some salted water to give it a glaze next time. Just use the small paint brush in the multi pack that no bugger needs (do they?).

I remembered I should have done that when I saw the egg on the counter as I took the pie out of the oven. :oops:

It happens.

Although its usually better to paint it on near the end anyway, so you could have done it and stuck it back in for a couple of minutes. Remember that next time you forget.

Ossau Iraty is a Basque sheeps cheese. I suppose the nearest comparator I can give you is high quality Manchego. Similar, not the same though. Lots of nuttiness and toffee flavours. Mellow and complex. The taste lingers for about 30 seconds in the mouth. £30/kg mind. Not quite as expensive as its Hispanic neighbours, but nonetheless... Favourite cheese along with Roquefort, which is the only other AOC ewes milk cheese.

As for Maury, its one of three Rousillon (French Catalan) fortified wines (along with Banyuls and Rivesaltes) down in the extreme South West. Like Port, but much lighter. More like a white dessert wine masquerading as red. I'm on a mission to discover more of Languedoc-Rousillon this year. This is part of my, ahem, research.

Both sound perfect for my tastes... they available in UK? I've not noticed in Morrisons... If not, where do I get em?

Though if you fancy a trip to a Booths, I know they stock both. In fact, and I say this whilst putting the predjudice of a northener to one side, Booths has the greatest selection of Sheeps/Goats cheese in any supermarket in this country.

Smoked Mackerel last night.

Lightly grilled and served with sliced peppers, cucumber, Wexford Mature Cheddar, three bean salad and a soft boiled egg (free range)

An eclectic mix but the flavours combined were wonderful. To drink? Adam's Ale.

bought some smoked mackerel yesterday fresh from the local wet-fish shop - with the intention of making some smoked mackerel pate... I'll report back!
