Kedgeree also - Made last night, my first ever attempt, so made as per Jamie Oliver's recipe. He said include one x red chilli, I used two. He knows what he's talking about, that lad. It's towards the edge of my chilli limit but still enjoyed another bowl tonight, with two more in the fridge.

I made Kedgeree a few years ago, its really good stuff and probably one of my favourite fish based meals. Mind you it dosent beat a good cod and chips.

Kedgeree should be mildly spiced IMO. It's a delicate dish rather than a blow your head off one.

Of course it should, traditionally, be eaten for breakfast. And I'd not want lots of chilli heat then!

Kedgeree is evil. I still shudder when remembering being made to eat it as a child. Always cold as it invariably made it's way around the plate for a couple of hours. Not even pudding or threats could get me to eat it. Hungry and bed early was the usual conclusion

Had I eaten it, I'd have been fobbed off with rice pudding. No wonder I wouldn't have eaten it. Now, if Angel Delight were on offer I might have considered it!

Yeah, I must point out that I'm in no way a 'heat' man. A Pepperami Firestick once left me in pain. Used some excellent smoked haddock off of the market (not the dyed stuff) and duck eggs. Except for using a chilli too many it really did work out very well. I won't be having it for breakfast though, ever.

There is an idea indeed. Can't remember the last time I tried some, certainly I've never had a go at it. I should point out that my stepfather makes the finest custard and the finest white sauce known to man. Can't cook owt else to save his life, but any attempt at a pineapple upside down cake would have to be right 'up there'. If you have a winning recipe then I should be most interested to learn of it, good Sir.

haven't got a recipe - my mum used to make it when i was a kid.... I think the basics are..

get some kind of pudding
turn it upside down on top of a pineapple ring

I made it abour a mobth ago.

Prepate a basic sponge mix .... any cook book with provide a recipe.

Botton of a deep vaking dush ( I used a casserole) melt butter and soft brown sugar until it's a gloop but in a not-quite but nearly still runny consistency. Place tinned pineapple rings on the bottom and then up the sides. Pour the sponge mix in top and place in a preheated oven ( again, times and temp as per the recipe).

when cooked turn out onto serving dish.

serve with your patent custard.

Yummy.

Ah, posh pop, my favourite. That stuff's another of the reasons that I travel up to Booths in Chorley. The nearest Booths to you will probably be the one in Wilmslow if you're ever over that way, or at Media City if you have to go into Mancunia. San Pellegrino is the only bottled water I buy, too.
