I made this too. Added more chicken and rice and fecked up on the stock measurements. :oops: Corrected it and the rice cooked eventually. A bit too stodgy for my liking (my own fault). Mrs BP loved it and went back for seconds. Miss BP ate it and liked it. :shock: Overall it was a success and i'll be sure to measure properly next time. D'oh!!

Mine wasn't perfect either - only realised at the last moment I had to use veg stock instead of chicken :oops: Apart from that t'was good though.

Ha! Glad most of you enjoyed it! It's pretty heavy and i only really manage a bowl and a bit before i'm flat out. Really useful for me though as a couple of portions of it can sort me out for lunches for the next week or so. Plus with the base of rice, chicken and veg you can turn into what you want, tbh.

I don't have cajun (keep forgetting to buy it) so instead add some chilli, herbs and that. still seems reet.

Tesco had a huge wall of spices on offer but only one small bottle of Cajun. Took me ages to find and then I damn well forgot to put it in the mix until about ten minutes before the end of the cook. That's what happens when you consume half a bottle of wine whilst doing it!

Rosso last night. Superb nosebag. Scallops with crispy belly pork on apple puree (minus points for serving it on a piece of slate) then roast monkfish tail wrapped in smoked pancetta and served in a grape and vermouth butter sauce, sauted potato with onions and rosemary. All finished off with a bowl of mixed ice cream.

because...

1) my chooks are laying more eggs than I know what to do with
2) my aunt bought me this fab double egg-cup
2) one egg is not un oeuf...

i sometimes do half with marmalade and half without for dipping... but these days I tend to do less dipping and more teaspooning of egg followed by bites of marmaladey toast... these eggs are freshly laid (as in just down my garden) - and so they taste good enough in an unadulterated-by-soldiers style - just on their own (save for a pinch of salt)

have just served this up to the family... the kids are not particularly picky - though they do have a fairly limited palate... it is very rare that a new item on the menu is enjoyed by all three of them..

however - served up five large bowls of this this evening - and it was all eaten - and seconds were requested...

it's a winner! thanks Keyser! 8)

(it did need more stock than the recipe suggests..)

Just had a go at this myself. Delicious.

This'll definitely make it onto the list of family favorites.

(yes, definitely more stock required. Tap water had to suffice)
Hope is what keeps us going.

^^ Just a tip .... put the sliced up chorizo in the microwave for maybe 30 seconds. They ooze out some of their oil with paprika and that added to the mix that way is an ace addition.

Ta for the tip bobo. As someone who could burn cornflakes it's always good to hear tips like that. I think i need to cut back my chorizo intake though.

The way you know when you're almost at the chorizo max is when your tongue starts to react.

At that point you're close to needing to stop.
