As mentioned, the amount of stock in the recipe is nowhere near enough to cook the rice in. The additional stock/water does mean that you will require more Cajun seasoning though. The more the better imho.

Will have that in the week i think. Were you all covering the pan when you made it? I can never be arsed with those type of recipes but means you need more stock than it says. Or does it need more even with a lid in which case I'll need a feck-ton!

Fair comment re the lid. I don't have one big enough as I do it in the wok. That's most likely the reason for it needing more stock.
I'd go with 500ml if I were you GM, assuming that you have no lid. Then top up from there. Not forgetting to chuck in extra cajun seasoning. It definitely benefits from it.

Anyway - coming up over the coming weekends, 49th Birthday 'celebrations'? Dinner with friends and ex-colleagues (that tick both boxes) at Dimitri's this w/e, ex-boss and his lovely wife round at mine for dinner the w/e after (I'm thinking scallops (inc roe, natch) with pancetta on wilted Kale, followed by crab (caught off of the Pembrokeshire coast on the morning I bought and froze them) risotto, and an as-of-yet unidentified pud (I'm thinking of having a crack at an Eaton mess, which I can do in advance). Nutter's for lunch the w/e after that. Taff Tavvit up for a long weekend after that.
I'm in a decent and peaceful place just now, in spite of turning 49.

Keeping it simple, just been into Lidl. Marmite flavoured 'double crunch' peanuts. Sounds so wrong, tastes so right.................

Nearly Mrs Bob is doing dosas from scratch. If they taste anywhere near as good as the smell in the family room, I'll be a happy man later.

On reflection, that does read rather pretentiously. It's only a semi detached house, but we extended the back so we have a kitchen/dining/living space. Hard to know what to call it!
Still, I'm about to watch Homes under the Hammer, where just the idea of a semi detached house is a million quid pipe dream for those in That There London.
