what you see there is a sea kayak - but not a sit-in long-nosed kayak designed for sea-touring (which I suspect you are more familiar with) - but one designed for a bit of paddling about, but mainly for kayak-surfing...
surfing in one of the long slender touring kayaks is pretty much a waste of time! (maybe canadians don't do kayak-surfing?)

I agree with all you say until the last sentence. I don't think you'll find the ones you refer to are called sea kayak in Canada - the ones on your webpage were fishing kayaks. If you do a google image search for "sea kayak" you will find they all seem decked in and have the apron, or spray deck, potential. My daughter is a qualified kayak instructor. What you have we would call a 'sit on top kayak' (as you mentioned) - this too can be searched in google images. I doubt they are recommended for going far out or in really choppy water.
