Proper definition of an oxymoron is 'something which is surprisingly true, a paradox'. Yes they are most commonly adjective/noun combos but the point picked up on is the 'surprisingly true' part. Your point seemed to be that the mascot was in fact not quality, and that 'mascots' and 'quality' are mutually exclusive, thus making it a contradiction. An oxymoron is more specific than that. An example of a noun/adjective one would be 'original copy', or 'extremely average'.
