It's just Japanese. I'm sure when they see us talking about shaved fish some Japanese person is going "shaved fish" wanko offo, it's just katsuobushi!

And the word jus goes back to Nouvelle Cuisine days. It was used to differentiate between adulterated and unadulterated product (yes, sauce) so a classic jus is a simple reduction of veal stock, as opposed to demi-glace which will contain a roux and other additions.

Came across this food blog over the weekend. Includes plenty of cracking looking recipes. Most of them are based on cooking for one person, though it wouldn't take a genius to scale them up. I think that i'll be doing the one with pork cheeks, chorizo and potatoes. Am I going to have to visit the butchers to get some pork cheeks? Tried the smaller Tesco, Morrisons and Aldi in Rammy without success.
There's even a section on coffee for all of you aficionados, with a link to a coffee drinkers forum. I didn't realise that such things existed. Enjoy!
